Development of Edible Films and Coatings with Antimicrobial Activity

TL;DR: In this paper, a review of the last years concerning the main hydrocolloids and antimicrobials used for developing edible films and coatings, the methods used to evaluate the antimicrobial activity, the applications and the legislation concerning the development of these materials, and different strategies related to the modification of structural characteristics and the future trends in the development are discussed.
Journal ArticleDOI

Antimicrobial activity and physical properties of chitosan―tapioca starch based edible films and coatings

TL;DR: In this article, the antimicrobial activity of chitosan-tapioca-starch-based coating solutions was studied and the results suggest that antibacterial action depended on the application technique, due to the fact that chitoshan is more available in a coating solution than in a film matrix.
Journal ArticleDOI

Influence of glycerol and chitosan on tapioca starch-based edible film properties

TL;DR: In this paper, the individual and interactive effects of glycerol and chitosan on tapioca starch-based edible film properties were investigated using response surface methodology, and it was observed from the mechanical characteristics point of view, that the chitosa had a positive effect while the glycerols had a negative effect.
Journal ArticleDOI

Physical properties of tapioca-starch edible films: Influence of filmmaking and potassium sorbate

TL;DR: In this article, the effect of different gelatinization and drying techniques on physical properties of tapioca starch edible films containing sorbates was studied, and it can be concluded that gelatinization technique and drying method used to obtain edible films affected network characteristics determining changes in physical properties, potentially affecting film performance.
Journal ArticleDOI

Effect of damaged starch on the rheological properties of wheat starch suspensions

TL;DR: In this paper, the influence of damaged starch content on particle size distribution and rheological properties of unheated starch suspensions and pasting properties were investigated, and the Weltman model was used to fit the flow curves of the suspensions.
